3 large peaches, diced
1 green bell pepper, diced
2 jalapenos, seeded and finely diced
- If less spice is desired substitute for 1 yellow or orange bell pepper
4 Roma tomatoes, diced
½ medium red onion, finely diced
Juice of one lime
¼ bunch of cilantro, finely diced
- Make sure to wash well
Salt and pepper to taste
Combine all diced produce in a large bowl and mix well. Pour in juice of one lime. Mix together. Place in refrigerator for 1 hour. Serve as a side and enjoy. Makes enough for 6.
