Spotlight on Radishes

Colorful, crunchy and containing almost now calories, radishes are an unsung hero of the edible plant world. With their slight bite, and variety of sizes and colors, they work well in a variety of raw dishes when you need to turn up the heat and crunch factor.

Radishes are root vegetables and they pack a nice amount of Vitamin C into a tiny package. Part of the brassica family of plant foods, they are related to broccoli, cauliflower and cabbage. They contain some powerful anticancer properties and their fiber can help keep your digestive tract healthy. Whether red, white or black on the outside- yes there are black radishes!- most are white or a variation on white on the inside. A standout is the watermelon radish, which has a sweeter taste and is the color of watermelon flesh inside. Beautiful and delicious, chop up some fresh radish to dip in hummus, sprinkle on salad, or make this delicious corn and radish salad. Enjoy your end of winter radishes!
