If you want to coin something a super food, well artichokes may fit the bill. Full of fiber, antioxidants, and just 25 calories for a whole artichoke, this is one awesome vegetable.

Artichokes are the flower buds of a thistle plant. We eat them before they bloom. While prickly and tough on the outside, the fleshy, or heart of the artichoke, is delicious when cooked. They have high amounts of folate, vitamins C and K, and are in the top 20 foods with the highest amount of antioxidants per serving. At 7 grams of fiber, eating an artichoke a day would help you meet a third of your daily fiber needs.
